Slow Cooker Rainbow Ratatouille
Serves: 4 | Prep time: 10 minutes | Cook time: 8 hours
Ingredients:
- 2 large tomatoes, diced
- 2 yellow squash, diced
- 1 orange bell pepper, diced
- 2 courgettes, diced
- 1 large aubergine, diced
- 1 large onion, diced
- Basil, thyme, rosemary, garlic chives, lavender, oregano, finely chopped, to taste
- 4 cloves garlic, crushed
- 40ml extra virgin olive oil
- Salt and pepper to taste
Instructions:
- Mix all ingredients in a slow cooker, reserving some of the fresh herbs for use as a garnish. Cook on low for 6-8 hours.
- Garnish with reserved fresh herbs. Optional: serve sprinkled with Parmesan cheese.
